Creamy Cilantro Dressing Recipe

“Mom, Can I have a salad?”

You can literally hear a choir of angels singing when a child makes this kind of request. The key to hearing this request on a daily basis is all in discovering their favorite dressing. This happens to be my daughter Krystal’s favorite dressing. The moment she tried this one she was hooked on salads. You never know which one your kids are going to Looove until it hits them.
 This recipe is easy enough for her make since she is 12 years old so all I have to do is make sure I always have the ingredients on hand and a large fresh bowl of salad fixin’s waiting for a hungry salad lover.
 You do however, either like cilantro or hate it. Unfortunately not everyone loves it so ask before you make it for others. If you are one of those who like it you are in luck! Cilantro is not only full of chlorophyll and other great phyto-nutrients, it is known, along with chorella, to help rid the body of harmful mercury poisoning. If you have amalgam fillings in your teeth, eat fresh organic cilantro!

Creamy Cilantro Dressing
Yield: About 1¼ cup
  • ½ cup Vegenaise (Look for this in the refrigerator section of your health store - It's the best EVER! I recommend the one with the purple label made with grapeseed oil)
  • ½ cup Extra Virgin Olive oil
  • 2 Tbsp lemon or lime juice
  • ½ cup cilantro, chopped
  • Pinch of sea salt
  • 1 tsp oregano
  • ½ tsp cumin, ground (optional)
  • 1 garlic clove (optional)
  • ¼ cup guacamole (optional) (Raw Foodies can use this instead of Vegenaise)
  1. Blend all ingredients in a blender until smooth. I use a magic bullet type small blender.
  2. Keep leftovers in a glass jar with a lid in the refrigerator.
