These Paleo-Wholetarian Pancakes are Grain-Free, Dairy-Free, Gluten-Free and really yummy.
To make them perfectly round use silicone round rings.
I make waffles using this recipe as well. It makes 5 standard size round waffles.
Paleo-Wholetarian Pancakes/Waffles

Makes 8 standard size round waffles or 14- 4" pancakes
Ingredients
- 6 large eggs
- 2 cup almond flour
- 2 Tbsp coconut flour
- ⅔ cup almond milk or coconut milk
- 1 tsp baking soda
- 2 Tbsp maple syrup
- 2 Tbsp vanilla
- ½ tsp sea salt
- 1 tsp ground cinnamon (optional)
- 2-4 Tbsp coconut oil for cooking
Toppings:
- Fruit of choice
- chopped nuts of choice
- Wholetarian syrup of choice
Instructions
- Whisk eggs together in a medium mixing bowl.
- Add the remaining ingredients except the coconut oil for cooking and whisk together.
- Use a waffle Iron to make waffles OR
- Use a griddle to make pancakes.
- Heat skillet or griddle to medium heat. They will burn easily with too much heat.
- Spread the coconut oil onto the griddle.
- For perfect round pancakes, use silicone rings.
- Pour the batter into rings onto the griddle. Use the back of a spoon if needed to help spread out the batter into the circle.
- Wait about 15 seconds and then take the rings off and place in the next spot on the griddle and repeat.
- Watch them carefully. When bubbles on top start to pop, check with a spatula to see if the bottom is firm enough and then flip pancake over to cook on the other side.
- Add more coconut oil if needed in the process.
- Remove from the heat.
- Top with fruit syrup, fruit chunks and nuts of choice.

These Paleo-Wholetarian Donuts are made with the same pancake recipe just poured into a pan with donut shapes. I used a chocolate frosting recipe in this photo but I really like them with Wholetarian blend pancake syrup drizzled on top. Either way they taste great. See recipe for the Chocolate Frosting here .
