wholetarian Peppermint Fudge Recipe

Getting a good quality protein powder is key here.  Look for clean ingredients (no soy or dairy or fillers), but for organic varieties with pea, rice, chia, hemp or other proteins. Carob is an excellent replacement for chocolate – high in nutrients, naturally sweet, and without the stimulants such as caffeine.  The powder can be found roasted or raw – enjoy the flavor and benefits along with the unique peppermint essential oil flavor.  You’ll love the taste….and love all the nuts!  Fudge isn’t fudge without nuts!  Enjoy the pure goodness!

Peppermint Fudge
Yield: 3½ cups
  • 1 cup honey
  • ½ cup coconut oil
  • 3 drops peppermint essential oil
  • 1 cup good quality protein powder (pea, chia, rice etc.) (See Wholetarian Approved Sunwarrior Brand)
  • ½ cup carob powder (I prefer raw)
  • 1 cup chopped walnuts, pecans or sliced almonds
  1. In mixing bowl, cream honey, coconut and essential oil together.
  2. Stir in remaining ingredients, adding more protein powder if needed to make a medium firm dough.
  3. Spread in an 8"x 8" pan and chill well.
  4. Cut into squares to serve.
